A fundraiser will be held Saturday, March 15 at the Lincoln County Fairgrounds for Tori Koubek of North Platte, who died tragically of a heart attack on Christmas Eve.
Tori was just 35 when she died. She left four children and a husband, Shanon, a Nebraska State Trooper.
The fundraiser starts with a soup cook off at 5 p.m. A live auction will be held at 7 p.m. Among the items to be sold is a framed and autographed photo of Danny Woodhead, as well as Husker and Bronco tickets.
Koubek’s heart gave out while she was helping a cow, Fancy, deliver a baby calf at the couple’s home south of Lake Maloney. Her friend Heidi Weir said Tori had just returned to the house to tell her husband that the calf was on the way. She died as she headed back out.
She was diagnosed with a heart condition 11 years ago, Weir said, but had been doing fine. She did not have life insurance because of the heart condition.
“She was a great friend. She loved taking care of kids and animals,” Weir said. “She would do anything she could for anyone who needed help.”
Koubek was a an in-home daycare provider and a volunteer North Platte fire fighter. She graduated from North Platte High in 1996.
The state patrol, Lincoln County Sheriff’s Office, North Platte Police Department and the North Platte Fire Department are conducting a statewide fundraiser for the Koubeks.
Organizers ask for a monetary donations or an item to be sold at auction. All proceeds will benefit the family.
